ZUCCHINI BITES - RECIPE

Preheat oven to 340 degrees
In a large mixing bowl shred 4 to 6 organic zucchinis also called Italian Squash. I use a good old cheese grater but you can also use food processor if you need to.
Add 1 cup of shredded mild Cheddar and 1 cups of any other cheese you would like smoked gouda, swiss, smoked chedder, white chedder, Monterey Jack etc...
1/2 cup of bread crumbs
Sprinkle in Granulated onion, seasoning salt, garlic salt, pepper and parsley.
TASTE.....if you are satisfied with the flavor
then mix in 4 eggs. If not keep adding your seasonings until it is right for you before adding eggs.
In a muffin tin or any glass oven safe dish spray with non stick spray (I use coconut oil spray) and fill. If using muffin tins only fill half way as they will rise a bit.
Bake for 30 mins or until Brown.
