EGGPLANT ROLL UPS - RECIPE

Slice large eggplants using a modaline slicer. Place slices on a cookie sheet sprayed with non stick spray or evoo and season both sides with salt, pepper and evoo.
Bake for 10 minutes at 375
After cooled remove and place slices on a prep surface.
On one end of slice place a spoon full of crusted goat cheese of your choice (I use a herb crusted goat cheese bought at Farmer's Market), small amount of Italian breadcrumbs, permesan cheese, mozzarella cheese, salt, pepper, oregano, basil and minced garlic and Roll.
Spray a glass oven safe dish with non stick spray and layer the bottom with your favorite marinara sauce. Place stuffed roll inside, side by side. Last top with marinara sauce and mozzarella cheese and cover and bake at 375 for 30 minutes.
